Keto Butter Chicken
Ingredients
For the Marinade:
1 lb (450g) boneless, skinless chicken thighs or breast, cut into bite-sized pieces
1/2 cup plain Greek yogurt
1 tablespoon ginger-garlic paste (or minced ginger and garlic)
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon turmeric powder
1/4 teaspoon cayenne pepper (adjust to your spice preference)
Salt and pepper to taste
For the Sauce:
2 tablespoons ghee or butter
1 medium onion, finely chopped
2 cloves of garlic, minced
1 teaspoon ginger, grated
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon turmeric powder
1/4 teaspoon cayenne pepper
1 cup tomato puree or diced tomatoes
1/2 cup heavy cream
2 tablespoons almond flour
2 tablespoons unsweetened almond butter (or peanut butter)
Salt to taste
Fresh cilantro (coriander) leaves for garnish
Instructions
For the Marinade:
In a bowl, mix together the Greek yogurt, ginger-garlic paste, ground cumin, ground coriander, turmeric powder, cayenne pepper, salt, and pepper.
Add the chicken pieces to the marinade and coat them well. Cover the bowl and let the chicken marinate in the refrigerator for at least 1 hour, preferably longer.
For the Sauce:
In a large skillet or pan, heat the ghee or butter over medium heat.
Add the chopped onion and sauté until it becomes soft and translucent.
Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.
Add the ground cumin, ground coriander, turmeric powder, and cayenne pepper. Stir well to combine the spices with the onion mixture.
Pour in the tomato puree or diced tomatoes and let the mixture simmer for a few minutes, allowing the flavors to meld.
Add the heavy cream, almond flour, and almond butter to the skillet. Stir to combine and let the sauce simmer gently for a few more minutes until it thickens.
Season the sauce with salt to taste. Adjust the spices and consistency as needed.
Add the marinated chicken pieces to the sauce and cook over medium heat until the chicken is fully cooked and tender, about 10-15 minutes.
