Cucumber Slices with Guacamole
Ingredients
1 large cucumber
1 ripe avocado
1 tablespoon lime juice
1 small tomato, diced
1/4 cup red onion, finely chopped
1 small jalapeno, seeded and minced (optional)
1/4 cup fresh cilantro, chopped
Salt and pepper to taste
Cooked shrimp, peeled and deveined, for topping
Lime wedges and extra cilantro for garnish (optional)
Instructions
Wash the cucumber and cut it into thick slices. If desired, you can peel the cucumber for a more refined presentation. Use a spoon to scoop out a small indentation from the center of each cucumber slice to make a little well for the guacamole and shrimp.
In a bowl, mash the ripe avocado with a fork until you achieve a smooth guacamole texture.
Add lime juice, diced tomato, chopped red onion, minced jalapeno (if using), and chopped cilantro to the mashed avocado. Mix everything together until well combined. Season with salt and pepper to taste.
Spoon a small amount of guacamole onto each cucumber slice, filling the indentation.
Top each cucumber slice with cooked shrimp.
Optionally, garnish with additional cilantro and lime wedges for added freshness.
